Grabbed a couple 12oz Tuna steaks nice and fresh today, they were amazing done up as follows....
Marinade
1 bunch fresh basil stemmed
4 cloves garlic minced
3 strips lemon zest
Juice of 1 lemon
1 tbsp white wine vinegar
1 cup virgin olive oil
1 tsp sea salt
1 tsp fresh cracked black pepper
Makes enough for ~ 4 steaks.
Trim any skin or dark bloody spots from the tuna steaks. Rinse them under cold water and pat dry with a paper towel then throw them in a bowl for marinading.
Combine the basil, garlic, lemon juice, vinegar, olive oil, salt and pepper in the blender to puree until smooth. Pour over the steaks and let marinate for ~ 1 hr turning the steaks several times.
Fire up the bbq for direct high heat grilling, real nice to add a few wood chips just when you are ready to throw the tuna on. Now do it! Tuna steaks ~1 inch thick should take about 4 - 5mins per side for a medium steak, 2 - 3mins for rare. After 2 mins rotate the steaks 45 degrees to create that awesome crosshatch of grill marks - same thing on both sides, after 2 more mins flip the steak over and do it again. Remove from grill and cover for 3 mins before serving to lock the juices in.
Most definitely one of the best if not thee best tuna steak I have ever eaten. Fast, easy and delicious
PS. I paired this up with a little schezwan stirfry, a wonderful, healthy feast.
