Default Anyone have a good Chili Recipe?

Something that's not super hot but can be made hot.

Me and RNT made this today, and it is awesome

1kg ground beef (sauteed)
5 Hot Italian sausages, diced and sauteed
2 boneless porkchops, diced and sauteed
2 cans of mushrooms
1 can of corn
3 cans of stewed tomatoes
1 small can of tomato paste
4 onions diced and sauteed
1 bulb of garlic, minced
2 cans of brown beans in molasses
2 cans of red kidney beans
2 stalks celery diced
2 bottles of Red ale
At least 1/4 cup of Chili powder (RNT used more like 1/2 cup)
At least 1 tbsp Crushed Dried Chilies
2 tbsp of Sea Salt
4 tbsp cocoa
Fresh Cracked Black Pepper.....to taste
2 Bay Leaves

Simmer all ingredients except beans together for 1.5 hrs, add beans and simmer for another hour. Garnish with crushed nachos, mozza and fresh parsley!

Enjoy

I can tell that the scent of it while it was cooking had my husband's mouth watering while we were there.
Now that you have posted the recipe he can have fun making it, and saves me from asking for it.
