Default Doppel Bock, well, sort of..

In the city I live, there's a Bock festival twice a year. Although I'm not a particular fan of Bock, some local brewers manage to brew damn good Bocks and Doppelbocks. Some time ago, I decided to have a go at it and try a Doppel style one. Ever since I had my first IPA, in the UK, I'm a fan of hoppy beer, so I thought I'd give a little twist to the Bocks I know.

Here's a recipe I came up with and the results where quite pleasing. Hoppy, bitter and a little sweetness.

Ingredients for a 5 gallon batch, at my amazing 65% efficiency:

Malts:
German Pilsner Malt 5.00 kg
German Munich Malt 1.44 kg
Cara Crystal 1.00 kg
Cara Pale 0.70 kg
German Caramel Pils 0.50 kg
Belgian Chocolate Malt 0.25 kg

Hops (pellets):
German Perle 7.1 alpha 27 gr first Wort Hopped
German Northern Brewer 8.9 alpha 13 gr all Of Boil
German Hallertauer Hersbrucker 2.2 alpha 16 gr 30 Min From End
US Cascade 5.0 alpha 9 gr 30 Min From End
German Hallertauer Hersbrucker 2.2 alpha 16 gr at turn off

Yeast: Wyeast 2206-Bavarian Lager

Mash at 154F. Boil for 90 minutes and hops as above.

Expected Pre-Boil Gravity: 1.076 SG
Expected OG: 1.088 SG
Expected FG: 1.021 SG
Expected ABV: 9.0 %
Expected ABW: 7.0 %
Expected IBU: 40 IBU
Expected Color: 25.3 SRM

I used 22-24L striking water (forgot to write that down during the process).

This beer should be lagered and fermented at low temperatures, all of which I couldn't do. Still I found it quite enjoyable.

If I'd change something next time, I'd probably add a little less Cara Pale and Caramel Pils, to reduce some of the sweet flavour.

Looks like a pretty hefty brew there, wish I had some for sampling!

It is! I shipped some to A. Unfortunately CA customs or the postmen managed to steal few bottles. But I won't give up sending some stuff through, from future batches. The Imperial is maturing, IPA to be brewed on Wednesday.
